Ana C. Freitas, PhD in Biotechnology by Catholic University of Portugal (UCP) in 1999. Assistant professor at Instituto Piaget/Viseu since 1999, where she continued to research in the food area. Since 2002 involved in several financed research projects and since 2011 a research member of CESAM/Aveiro Univ. From November 2016 is a Principal Researcher in UCP-CBQF. She has published 87 papers indexed in ISI Web of Knowledge, 22 book chapters, 19 proceedings’ papers & has over 130 communications in scientific conferences. Editor of 1 book of Int. distribution by Publisher’s invitation (CRS Press/Taylors & Francis Group). Currently, her research is on the development of novel foods incorporating bioactive compounds from different biological sources as well to adapt microencapsulation technologies for extreme oxygen-sensitive bacteria with beneficial effects in gut microbiota. In parallel, her research also involves tools minimizing the impact of different sources of pollutant contaminants.
