
PROJECT SUBMITTED TO THE INNOVATION TRACK / NAFEI PROGRAM AND CONTEST BIOTEC PRIZE 2020
Portugal is one of the largest acorn producers in the world, however only a small part is used for animal feed, and a large part is lost without recovery. Acorn has a high nutritional value containing components that can have health benefits, for example the presence of non-hydrolyzable starch. It should also be noted that the acorn is rich in fiber and protein, with a lipid profile similar to that of olive oil and without gluten (which makes it particularly interesting for celiac patients), in addition it is still very rich in antioxidant compounds.
This project aims at the development of cookies with the incorporation of acorn flour in order to enhance this fruit through its nutritional and functional properties.
Our target audience is young and dynamic consumers, with healthy and energetic lifestyles looking for a nutritious and flavor-rich diet. Our product would be suitable for individuals with some pathologies such as hypertension, dyslipidemia, etc. or sensitive to food allergens (gluten, etc.).
