Abstract

Honey is a natural sweetener widely used in Portugal for several centuries. Due to the current trend of looking for healthier and more sustainable alternatives to sugar, always considering the importance of bees in ecosystems, the Golden Pearl was created. This product consists of spheres of honey freeze dried with liquid nitrogen with individual portions of 5g, sold either in glass jars with 40 spheres or in individual paper bags sold in boxes of 100 or 500 spheres. This idea will allow the substitution of sugar in the most varied situations, which will lead to a healthier and more sustainable practice to sweeten everyone's daily life.

The opportunity of this business arises from the greater demand for healthier and more environmentally friendly food, as well as a greater demand for products other than those already sold and even for gourmet products. The fact that traditional liquid honey has always been used by the Portuguese contributes to their confidence in trying this product with the same flavor, the same characteristics, but with an innovative presentation.

Our potential customers are general population, gourmet stores, bulk stores, organic stores, cafes, restaurants and hotels.
