Abstract

The NutriSafeLab project – development of solutions for the bakery industry to promote CleanLable and the nutritional and functional value of its products – brings together the consortium that integrates the promoter Celeste, well positioned nationally in the bakery sector, together with Escola Superior de Biotecnologia – Universidade Católica Portuguesa, with extensive research experience in these food challenges. Celeste ranks among the largest bakery companies in Portugal and the first Portuguese company in this sector. The company promotes its R&D in this project in response to the needs of consumers, who are looking for products with a reduced number of synthetic additives or with natural ingredients and increasingly functional to promote their health. Thus, this project will combine efforts to develop new "cleanlabel", "healthy fat" and NutriHealthy" product lines that will allow the company to position itself in an innovation segment, promoting its capacity for competitiveness in the national and international sector.
